A few years ago, my batchmates and I compiled and released the ICAn cook! recipe cards (still available for purchase!). This was one of the recipes and I can’t believe that it took me four years before I tried it!
It’s so easy to make PLUS it’s a complete meal! I am today years old when I realized that this will make my children eat spinach! Thank you to Jenny Chan for sharing this recipe!

I faced a few challenges as risoni/orza was not available in supermarkets. Good thing I was able to find one online via Eurorich Food Trade. Then I accidentally bought too much spinach! To make sure it doesn’t go to waste, I had Yaya blanch it, chop it and freeze them. And it was only yesterday that I thought, why not make it since I had all the ingredients with me.

I used all the spinach that I had and it floated up the the top of the pan while cooking. I had to mix it up before serving.

This is my best effort in plating.
My family LOVED IT. I mean LOVED it because there were no leftovers. My eldest daughter K complained that she didn’t get to eat any chicken! Her complaining meant that the dish was that good! Next time, I will make sure to use more chicken pieces.
